Not only Nordic gourmets are convinced that the “graved” method of preparation suits this fine Pacific fish perfectly. With a fat content of 4 to 5 percent, it is leaner than other types of salmon and characterised by particularly firm flesh. At FRIEDRICHS it is treated using a unique process. After being filleted by hand, the salmon is laid in a mild marinade enhanced with genuine Canadian maple syrup over a period of several days.
